Meat consumption during the Yucatan henequen boom, 1880-1916

Abstract
The objective of this research essay is to determine the consumption of beef and pork among the inhabitants of the different economic areas of Yucatan from 1880 to 1916. Did the wealth emanating from the henequen boom improve the meat diet of the urban and rural population of the henequen area and that of agricultural diversity? Did the laborers wages have the capacity to increase their meat consumption? The examination of the data allowed to identify cycles of differentiated increase and decrease in the consumption of meats, and a downward convergence in all the parties of the state between 1906 and 1916.
